    Preheat oven to 180C. Line a 20x20cm baking pan with parchment paper.

    Melt chocolate and butter together in a heatproof bowl over simmering water. Let cool slightly.

    Whisk sugar and eggs together until light and fluffy, about 2 minutes.

    Add the melted chocolate mixture and vanilla to the egg mixture. Stir to combine.

    Fold in flour, cocoa powder, and salt until just combined. Don't overmix.

    Pour batter into prepared pan. Sprinkle with sea salt or walnuts if desired.

    Bake for 22-25 minutes until the top is set but center is still slightly soft.

    Let cool completely in the pan before cutting into squares.

Tips

Don't overbake - they should still be slightly wobbly in the center.
