Add the chicken, taco seasoning, chicken bouillon, and green enchilada sauce (or pelati) to a slow cooker.

Squeeze the juice of 1 lime into the mixture.

Cook on low heat for about 3-4 hours.

After the cooking time, add the rice and cook for an additional 20 minutes or until the rice is fully cooked.

Add the diced jalapenos, onion, and cilantro to the mixture.
