    Grate onion, garlic and ginger.

    Quarter the shiitake mushrooms. If using dried ones, hydrate first with boiling water for 15 minutes.

    Put sesame oil in a big pan, add onion, garlic and ginger, and sauté for 2 minutes.

    Add the chili, ⅓ of the mushrooms, soy sauce and mirin. Steam for 1 minute.

    Add the broth and let it boil. Let cook for 30 minutes on low heat.
